Chicken Atchar Curry
Ingredients:
- 500g chicken breast or thighs, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons vegetable oil
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 cup tomatoes, chopped (or 1 can of diced tomatoes)
- 1/2 cup plain yogurt
- 1/2 cup mango atchar (or more, to taste)
- Salt and pepper to taste
- Fresh coriander for garnish
- Cooked rice or roti for serving
Instructions:
- Heat the oil in a large skillet over medium heat. Add the onions and cook until they’re soft and translucent, about 5 minutes.
- Add the garlic and ginger and cook for another 2 minutes.
- Stir in the curry powder and turmeric, and cook for 1 minute to toast the spices.
- Add the chicken to the skillet and cook until it starts to brown, about 5-7 minutes.
- Add the tomatoes and cook until they start breaking down, then stir in the yogurt and atchar.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is fully cooked and the flavors have blended.
- Season with salt and pepper to taste.
