Safari Outpost's Chicken Atchar Curry

Here's a delicious South African-inspired recipe that uses atchar to add a tangy, spicy twist to a classic meal. Atchar is a popular South African condiment, usually made with pickled mango and a blend of spices.

Chicken Atchar Curry

Ingredients:

  • 500g chicken breast or thighs, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 cup tomatoes, chopped (or 1 can of diced tomatoes)
  • 1/2 cup plain yogurt
  • 1/2 cup mango atchar (or more, to taste)
  • Salt and pepper to taste
  • Fresh coriander for garnish
  • Cooked rice or roti for serving

Instructions:

  1. Heat the oil in a large skillet over medium heat. Add the onions and cook until they’re soft and translucent, about 5 minutes.
  2. Add the garlic and ginger and cook for another 2 minutes.
  3. Stir in the curry powder and turmeric, and cook for 1 minute to toast the spices.
  4. Add the chicken to the skillet and cook until it starts to brown, about 5-7 minutes.
  5. Add the tomatoes and cook until they start breaking down, then stir in the yogurt and atchar.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is fully cooked and the flavors have blended.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh coriander and serve hot with rice or roti.
