Ingredients:
- 1 can (410g) sweetcorn kernels or creamed sweetcorn
- 2 cups (500ml) mealie meal (or maize meal)
- 1 cup (250ml) buttermilk (or sour milk)
- 1/2 cup (125ml) white sugar (adjust to taste)
- 2 large eggs
- 1/4 cup (60ml) melted butter (or sunflower oil)
- 1 tsp baking powder
- Pinch of salt
Instructions:
- Preheat the oven to 180°C (350°F) and grease a loaf tin or baking dish.
- In a large bowl, combine the mealie meal, baking powder, and salt.
- In a separate bowl, whisk together the eggs, buttermilk, melted butter, and sugar.
- Stir in the sweetcorn (if using kernels, mash them slightly for texture).
- Gradually fold the wet mixture into the dry ingredients until well combined.
- Pour the batter into the prepared tin and smooth the top.
- Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
- Let it cool slightly before slicing.
Serve it warm with a spread of farm butter or paired with bobotie or a braai. Enjoy the authentic South African flavors!
