Traditional South African Mieliebrood

Ingredients:

  • 1 can (410g) sweetcorn kernels or creamed sweetcorn
  • 2 cups (500ml) mealie meal (or maize meal)
  • 1 cup (250ml) buttermilk (or sour milk)
  • 1/2 cup (125ml) white sugar (adjust to taste)
  • 2 large eggs
  • 1/4 cup (60ml) melted butter (or sunflower oil)
  • 1 tsp baking powder
  • Pinch of salt

Instructions:

  1. Preheat the oven to 180°C (350°F) and grease a loaf tin or baking dish.
  2. In a large bowl, combine the mealie meal, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, buttermilk, melted butter, and sugar.
  4. Stir in the sweetcorn (if using kernels, mash them slightly for texture).
  5. Gradually fold the wet mixture into the dry ingredients until well combined.
  6. Pour the batter into the prepared tin and smooth the top.
  7. Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
  8. Let it cool slightly before slicing.

Serve it warm with a spread of farm butter or paired with bobotie or a braai. Enjoy the authentic South African flavors!
