Chicken Flattie

A whole chicken that has been flattened or spatchcocked for the purpose of grilling or roasting. Spatchcocking involves removing the backbone from the chicken and then pressing it flat, which helps the chicken cook more evenly and quickly. The result is a chicken with crispy skin and moist, tender meat. It is seasoned and marinated with various herbs, spices, and flavorings including Cape Malay, spicy peri peri, rosemary and lemon & herb.
