Chutney Chicken Bake

The easiest weeknight dinner you'll ever make! With just a few ingredients from Safari Outpost, you can have a delicious South African-style dinner on the table in under an hour.

Ingredients (Serves 4-6)

-4–6 chicken pieces (breasts, thighs, or a mix)

-1 cup cream

-½ cup Mrs Balls Chutney

-1–2 teaspoons Ina Paarman’s Chicken Spice (to taste)

-Optional: 1–2 tablespoons apricot jam (adds a sweet Cape Malay twist)

-Fresh parsley, chopped, for garnish (optional)

Optional sides: Serve with rice, mashed potatoes, or a crusty loaf for a true South African experience.

Instructions : Lekker & Easy!

1.Preheat your oven to 190°C (375°F).

2.Place the chicken pieces in a baking dish.

3.Pour over cream, then add Mrs Balls Chutney. Sprinkle evenly with Ina Paarman’s Chicken Spice.

4.Optional: Add apricot jam on top for a sweet, tangy Cape Malay flavour.

5.Mix gently so the chicken is coated in the creamy, tangy sauce.

6.Bake for 35-40 minutes, or until the chicken is cooked through and golden on top.

7.Garnish with fresh parsley and serve immediately with your favourite South African sides.

Tips for Extra Lekker-ness

-Add chopped onion or garlic to the cream for extra depth.

-Sprinkle paprika or curry powder for extra warmth and colour.

-Double the recipe for leftovers ; it reheats beautifully and keeps the sauce creamy.
