Hearty Cape Town Inspired Chicken Curry

This curry is inspired by Cape Town’s vibrant home kitchens, where bold spices, coconut milk, and slow-cooked chicken create a warm, hearty, and comforting meal. Using Amina’s All Purpose Curry Paste, you get authentic South African flavors that are perfect for cold Canadian nights.

Ingredients

750g chicken thighs, bone-in or boneless, cut into chunks

4–5 tbsp Amina’s Wonder Spice – All Purpose Curry Paste

2–3 tbsp vegetable oil

2 large onions, chopped

3 cloves garlic, minced

2 large potatoes, peeled and cubed

2 large carrots, sliced

1 can (400ml) coconut milk

1½ cups chicken stock

Salt and pepper, to taste

Fresh coriander, to garnish

Steamed rice or warm crusty bread, to serve

Instructions

Brown the chicken
Heat oil in a large pot over medium heat. Add chicken pieces and brown lightly on all sides. Remove and set aside.

Cook the base
In the same pot, sauté onions and garlic until soft and fragrant. Stir in Amina’s All Purpose Curry Paste and cook 1–2 minutes to release the flavors.

Build the curry
Add chicken back to the pot. Pour in coconut milk and chicken stock. Stir to combine. Add potatoes and carrots.

Simmer to perfection
Reduce heat to low, cover, and simmer 25–30 minutes, or until chicken is tender and vegetables are cooked through. Taste and adjust seasoning with salt and pepper.

Serve and enjoy
Garnish with fresh coriander. Serve over steamed rice or with warm crusty bread for a comforting, hearty meal.
