Our Dorper cross leg of lamb, known in South Africa as lamsboud, is a generous cut carrying a balance of lean, tender meat and a marbled layer of fat. Every leg is selected and prepped by our butchers here in Calgary.
Roast it whole for a South African Sunday lunch, or butterfly it and cook it slowly over the coals. Average weight is around 3.3kg.

Dorper is a sheep breed developed in South Africa by crossing the Dorset Horn with the Blackhead Persian. Our lamb is Dorper cross, which brings the fine grain and natural marbling the breed is known for.
Can I butterfly this leg of lamb for the braai?
Yes. A butterflied leg lies flat over the coals and cooks far more evenly than a whole leg. Remove the bone and open the meat out to a roughly even thickness before it goes on the braai.
