What is oxtail bredie?
Bredie is a South African slow cooked stew, and oxtail bredie is one of the best known versions. The oxtail is browned and then braised for hours with onion, tomato and spices until the meat falls from the bone and the sauce thickens on its own.
How long does oxtail take to cook?
Three hours or more. Oxtail is dense with collagen and connective tissue, and only long, slow, gentle heat turns that into the gelatine that gives the dish its body. There is no fast version of this one.
Can I use oxtail for potjiekos?
Yes. Oxtail is one of the classic potjie cuts. The extended cook over low coals suits it, and the bones and collagen thicken the pot without needing flour or stock.
